chocolate pairing tasting no. 1

Solo Lei

Producer: Natalina Grandi
Region: Veneto
Grapes: Garganega

A crisp and mineral nose with jasmine, slate and white grapefruit. The palate is fresh and fruity with asian pear, white peach and underripe melon. A little almond paste and lime zest on the crisp, snappy finish.

Meyer Lemon Truffle

chocolate pairing tasting no. 2

Max

Producer: Tinedo
Region: La Mancha, Spain
Grapes: 85% Tempranillo, 10% Syrah, 5% Cabernet Sauvignon

A more complex wine from La Mancha with persistent notes of strawberry jam and wild flower. The palate adds a touch of balsamic and licorice to the red fruits and blends some dark cherry into that strawberry jam note.

Irish Cream Truffle

chocolate pairing tasting no. 3

Costa Catterina Nebbiolo

Producer: Costa Catterina
Region:
Piedmont, Italy
Grapes: Nebbiolo

A brighter expression than you'll find in the long-aged Barolos. Though aged in the same big casks (but for only 24 months), the wine displays tart raspberry and fresh snipped flower scents and drinks with flavors of bright red fruits, cherries soaked in alcohol and hints of licorice and forest floor bramble.

Vanilla Bean Truffle

chocolate pairing tasting no. 4

Cabernet Sauvignon

Producer: Peltier
Region: Lodi, California
Grapes: 86% Cabernet Sauvignon, 12% Teroldego, 2% Syrah

This Cabernet Sauvignon was picked ripe to maximize the black fruit character of Cabernet Sauvignon. This wine was fermented in stainless steel with FX10 yeast. The entire blend was then aged in french oak barrels for 3 years. The wine has notes of black currant, blueberry and vanilla flavors.

Espresso Bean Truffle

chocolate pairing tasting no. 5

Ca de Lion Barbera

Producer: Ca de Lion
Region: Piedmont, Italy
Grapes: 100% Barbera

Expressive, tart, juicy and intense. Shy on opening it quickly blossoms into a bouquet of wonderful red fruits, a touch of coffee, a handful of florals and a few other goodies as well!

Milk Chocolate Truffle

Cabernet Franc

Producer: Natalina Grandi
Region: Veneto, Italy
Grapes: Cabernet Franc, splash of Merlot

Ruby red and intense with a myriad of red fruit and herb aromas. Arugula adjacent black pepper and earthy plum notes on the palate with a deep, dark finish of cassis and cherry jam.
